Lets Make Pasta Dough! - Happy New Years!

Pasta Dough

Ingredients
2 Cups of OO or All-Purpose Flour
2 Eggs
4 Eggs Yolks
Instructions
On a wooden cutting board, pour 2 cups of flour. Using a measuring cup or a bowl, make a well in the flour.
Crack eggs into the well, and add the egg yolks. Whisk the eggs, and slowly incorporate into surrounding flour until well combined. It should feel like firm play dough. If the dough feels crumbly or too dry, add 1-2 tablespoons of cold water. If the dough feels too wet, add flour.
Knead the dough until smooth, about 10 minutes.
Wrap tightly in plastic wrap and refrigerate it for at least 30 minutes. You can refrigerate for up to 2 days before you roll out. Divide the dough into 4 equal pieces. Using a pasta machine, roll and cut pasta as desired.
To cook, bring a well salted pot of water to a gentle boil. Add past and cook for 3-5 minutes or until it floats.

🏆 Guinness World Record Witness Application

A brief description of the record:
On March 15th, I will be attempting the Guinness World Record for “Fastest Time To Visit All Chicago Subway Stations.” I will need 2 witness that are “not associated with, or related to, the record organizers or participant.” Essentially there will be one main clock, one of the witnesses (which will be our timekeeper,) will have. Both witnesses will have to be at the starting and end station. We will start at Linden on the Purple Line. (in Wilmette) Only catch, our train departs at 6:20 AM in the morning. We will end at Polk, on the Pink Line at around 4:30 PM. (In the Illinois Medical District, west of UIC.) This adventure uses trains, buses, and not automobiles! There will also be a witness book. Here is an excerpt from San Fransisco’s BART record guidelines: “Witness Book - In addition to the two independent witness statements, a book must be made available for additional independent witnesses to sign. The book should be set up so that the following details can be included for each potential witness: a) Date and Time, b) Location, c) Name and d) Signature. We appreciate that it might not be possible to gain an unbroken line of witnesses for the attempt, but one should try to obtain as many as possible.
